Thinning increased brix by 3+%. Dwarf tree vs standard by 1+%.
And over watering deletes brix by what? I’d say at least 30%
My experience is that over watering can cut brix in half. That would be at the extreme. And my experience is with nectarines. I don’t know about peaches. They just seem stuck mostly in the teens. Have seen big differences in apricots but not sure it’s all water.
Here we will have too much water at the same time we don’t have enough sun, so it’s hard to tell which issue is most important. However, CA makes pretty clear that too much water is a good way to destroy the quality of both peaches and nects.
I’ve found that plums can get up high sugar even on sites with sprinkling systems that keep the soil constantly moist. It may even improve their quality.
