My daughter has a bitcon in her front yard.
Cross of bitternut hickory and pecan.
It taste much more like a bitternut hickory than pecan. Extremely bitter.

The bitter compounds are water soluble and not fat soluble so the oil that gets pressed out doesn’t have the bitter compounds

One would anticipate that bitternut hickory oil tastes terrible but it has no bitterness.

A few years ago I was foraging for hickory nuts in a river bottom… got lots of nice shagbarks.
Also discovered a bitternut hickory.
That nut meat looked so good… similar to pecan and the shell was thin… easy to crack.
It stayed in my mouth about 1 second… but the extreme astringency remained much longer. It only takes one of those to learn your lesson

TNHunter, some day we need to take a trip south of Selma Alabama and look at the hickory trees along the Alabama river. I know of a couple of places where you can walk 50 feet and put a hand on 5 different species of hickory… and none are pecan.
