I’ve grown onions with success a few times before, and this never happened. Normally I wait until the greens fall over and then picking store. This time, the greens are still looking very vigorous and maybe half of my crop is shooting up flower stocks. Must I harvest the flowering ones and use immediately? Not going for seeds, etc.

happens with overwintered onions when temperature swings with daylight schedule between planting and growing is mismatched. Also called as bolting. yeah, harvest them or let it flower for new seeds.

Will they last in the ground a while if I cut the flower stock off?
Also, if harvested now, is any of the green portion worth eating?
they will live, but the bulb might get smaller. leaves and bulbs are good to eat as green.
