I made some peach pickles last weekend
They came out very nice, but they are sweeter than expected – definitely a sweet pickle. I followed some random on-line recipe:
They are very good with fatty/greasy foods, they cut though that flavor and make it less heavy.
I have been meaning to make peach pickles for many years as the Indian Cling peach is traditionally a pickling peach. They do indeed make excellent pickles. I am curious if anyone else has a good peach pickle recipe. I looked up a few old peach pickle recipes and they were more or less the same idea as this one. The only thing I did really different was I used a carrot peeler on the peaches, Indian Cling you cannot blanch the skins off of. They peel really easily with a carrot peeler though.
