Pears are starting to show up! Here’s a recipe I created after many experiments - please share your improvements !!
1-1/2 c flour
1 t baking powder
1/2 t baking soda
1/2 t salt
6 T oil or 1/2 c butter
2 eggs
3/4 c sugar
2 pears, smashed
for a bread pan, bake 350 for 1 hour
for a brownie pan … 350 for … I dunno !
Addition ideas:
lemon and ginger
1 t vanilla
cinnamon
1/4 c yogurt
dash nutmeg
So far, lemon and (minced) ginger has been my favorite addition.
Cautions: I only use organic ingredients, sea salt, unrefined sugar, and for quick breads I use whole wheat pastry flour. Modern industrial ingredients may need modifications.
