In the cold hardy land, Carmel Cocktail aka Claypool H-63a is probably a good choice. Two other good Claypool choices might be Prairie Sun A-33 (very early harvest, for variety) and Prairie Star H-118 (early harvest) but I hear H-118 is very similar to H-63a.
You want some flavor variety with that get Barbra’s Blush sometimes spelled Barbara’s Blush. And Lehman’s Delight.
Sofie’s Gift is so new we don’t have taste reviews (BEGIN EDIT) from various climates in America (END EDIT). You wanna try it you could help get us reviews but make sure you mention your climate (e.g. Julian California in San Diego County makes great apples at 4,300 feet above sea level).
In the posts on this forum Nikita’s Gift last year did not produce until after Zone 5 America was having hard frost so it won’t actually fruit there. It might work in Zone 6+, though I don’t know how your elevation affects that.
