I live in SF, hardiness zone 10b, and I’m looking into planting a plum tree and grafting some other plum types or apricots. I would love some recommendations for varieties that grow well in San Francisco.

One thing to watch for is chill hour requirements. I suspect your area is low chill which will limit your plum options. Fruit Tree Chilling Requirement | Dave Wilson Nursery
Unless you have a particularly suitable microclimate, I doubt apricot will do well in your area. The low chill varieties may set fruit for you, but they are unlikely to ripen well unless you’re in the warmest, sunniest parts of San Francisco. Plums are a better bet. Here are some options:
