Pruning water sprouts with fruit?

The drawing below shows a typical situation I have on some peach trees and some plum trees. I have a lot of water sprouts ( not sure if I’m using that correctly) growing straight up into the air with a fruit at the bottom.

For the peaches it will be a single vertical branch space here and there among the tree. For the plums it will be four or five in a row going down a horizontal branch

How should I handle the pruning of these at this point in the year? I’m a little worried of having an overgrown mess if I just leave them. I’m a little worried of having an overgrown mess if I just leave them.

Should I take action or just relax.
