Red Stripe Leaf Amaranth

Also known as Red Leaf Yin Choy, sometimes as chinese spinach – although it likely originated in South America. Young leaves go in salad, mature leaves go in stir-fry, seeds are made into a pop-corn.

Beautiful! I’ve tried growing these twice and they struggled. Just not hot enough here.

nice plant. I grow similar variety too, used leafs in soup.but have never Used the seeds,. How do you cook the seeds?

You can use them as you would barley. If you have enough for pop-corn, then follow any recipe using dried corn kernels.

you got that right, amaranth greens are tasty in broths/soups.

While I love the idea of Amaranth, I’ve had to weed out way too many amaranth seedlings.
