American Persimmon Grafting Questions

I am getting ready to graft D. virginiana rootstocks to selected D. virginiana cultivars for the first time and I have a few questions. The rootstocks are almost 4 years old and most are about 3 feet tall. They are all still currently dormant. My assumption is that I should go ahead and prune the rootstocks while dormant to prepare for grafting. Is this correct?
