Rose hip jam!

Anyone making anything from rose hips? I just made a small batch of fridge jam from 2 lbs of Rugosa hips. I plan to dry some and make some more jam or jelly soon! Im leaning more towards jelly as even for big hips the seed and hair content is astronomical! Any good tips for processing or removal?

The best processing tip is the German way of making rose hip jam. Cook them whole, just remove stalks and flower tips beforehand. Then press through a colander to remove seeds, add your sugar & pectin, cook and done. The hairs will get broken down while cooking enough to cause no issues. I made a batch from dog roses, villosa var. Karpatia and rugosa last year and decided I’m only going to dry rugosa for tea. That batch tastes like the other two diluted by adding 50% of water.
