Sanichon kiwi normally with hard core?

Just harvested Saanichon kiwi. Disappointed with hard core. Others find this?

According to AI:
“Saanichon is a popular choice for home gardeners in cooler climates due to its hardiness and productivity, even if the core is a bit firmer than commercial varieties.”

Even with no hard frost, the vine had lost 3/4 of its leaves and the fruit gave under hard pressure, so I harvested them. I wonder if harvesting sooner and letiing them ripen off the vine would have softened the core. Or table ripening for a week will improve core’s toughness. Or this is normal for variety?
