Source for jujube rootstock or viable seed?

I just cracked a jujube pit and found what looks like a viable seed inside. If I want to grow it out, what’s the best way to proceed? Plant it immediately? Let it dry out and plant it in the early spring? Keep it cold and slightly moist in the fridge (like a pawpaw seed) and plant it in the early spring?
