I appreciate your review of the Fall Pippin. I, like you, will usually make a pie/crisp with several different types of apple varieties.
Older/heirloom varieties are not the ultra hard crunchy that are so popular today. So I understand the less crunchiness the older apples have yet they do have some crispness to them. I do have some heirloom apples that have that type of texture. As long as they are not mushy or mealy. My family and I do not like apples with that soft mealy texture- a waste of space in the orchard here.
