Summer pruning - mature sour cherry tree in zone 6

Iā€™d like to do summer pruning on my 13yo North Star Pie Cherry tree. Cherries are harvested already, got about 11lb this year, so tree is ready for some summer haircut :wink:
My main pruning intend is to renew fruiting wood and bring it closer to the tree center and make tree globe slightly smaller (make scaffolds 1-2ā€™ shorter).
My understanding is that only 1-2 branches should be renewed per growing season, is it correct assumption or does it depend where renewal cut is done (see my second picture with red and orange markers)? How aggressively should I do summer pruning on this tree?
I would appreciate any advise since information on cherry tree pruning is rather limited.
