My beds are still mostly woodchip right now and I plan to plant in the spring when i ammend with a bunch of compost. How should I go about storing these tubers?

I would probably put them in a plastic pot mixed with some potting soil or sand and bury that where one of your beds will be, then just distribute them in the spring when you’re ready. Sunchokes are basically indestructible, so even if it’s late enough that they’ve started to sprout it’s fine to move them. If you prefer, they will keep for about a year in a plastic bag in a fridge vegetable crisper drawer.
As for potatoes, a paper bag in a dark, cool location like a root cellar is best, but if they’re for planting, most varieties will last over winter in a dark place at room temperature.
I store them in the dirt they will sprout up next year.
mine have survived in ground down to -40. just dig a hole and put them in a pot in the hole and bury. they will be fine. alot tougher than most root crops.
How many tubers do you have?
I believe about a lb of my 2 varieties of sunchokes and 4 lbs of seed potato
