Yes, they are awesome dried. I would slice with a mandolin so they were consistent. You slice them firm and the drying process removes astringency.

This is an interesting observation. Many sources - including the ones you attached in this thread, say that Saijo is a very early cultivar-- possibly the earliest.

Perhaps in your warm climate, others ripen earlier due to receiving more heat units. I am only speculating here.
