Those with a home orchard with apple trees in North Carolina, what varieties are you growing?

I’m starting a little home orchard and I’m trying to decide what varieties of apples to graft. So far I’ve picked a few that sound really interesting, but I’d like to also get some more that should do especially well in NC zone 7b.

I’m trying to find ones that would be good for either fresh eating or baking and if they have any cedar-apple rust resistance that would be great.

The NC state extension suggests these for varieties that should do well in our climate that have some cedar-apple rust resistance, have you had any experiences with any of them?:

Consider adding MonArk (not Monarch) to your list.
Good disease resistance in an early-season apple that serves well for fresh eating, cooking, drying, and keeps well for 6-8 wks under refrigeration.

Slightly off topic, but Cedar Apple Rust is easily controlled, and even if not completely controlled you can still get a lot of good fruit. Perhaps you aren’t planning on spraying? If not, the summer rots are a huge concern.
