Vegan baking with fruit

I love to bake when I get the chance. Love Vegan food and make lots of cake with the base ingredient banana. Any Vegans out there with any recipes for fruit pies etc?

Have you tried using Banana flour made from green bananas? I have read that it’s a lot like wheat flour without the gluten. It has to be the type made out of green bananas though, because only green bananas have a lot of starch like all purpose flour has a lot of starch. Although bananas like potatoes have resistant starch (good starch). Go look that up.

I am developing a vegan gluten free brownie recipe that’s already better than any non vegan brownies I have ever had. So yes, vegan sweets can be great, and satisfy non vegans.

I’m not exactly vegan, but I like it when most of what I eat at least aims in that direction.
Recipes are easy to find, but avocado makes a really nice base for a chocolate pie. Depending on your crust, it may not even need any baking at all.
I’ve had similar using banana, but I don’t like it as well. Commercial bananas have a very narrow window of appeal for me, and they work best for breads and pies after they have moved out of that window.

My wife has started making an apple walnut cake from Nora cooks that I can’t get enough of. If she makes one I will keep sneaking back into the kitchen to cut mýelf another slice until it has disappeared. If you make it, hide it!
