My husband made a couple of jars from our home grown watermelons. I had never tried pickled watermelon rind before. It is excellent. Crunchy, sweet and sour and aromatic.
He used sugar, cinnamon sticks, cloves, allspice, salt, white vinegar and fresh ginger slices.
I’ve heard of people doing it but have never tasted it. Right or wrong I was taught from an early age that eating the rind of a watermelon will give you the runs. So I’ve avoided it. Lol
Looks really good!!! I never thought of adding fresh ginger. What a great idea. I love the taste of cloves that are always in a good recipe for pickled watermelon rinds. OOOOh. Sooooo good!
