recipe:
ingredients
- ~ 650g figs
- 150g sugar
- couple squeezes of honey
- few squeezes lemon juice from bottle

- cut the stems off and halved.
- add to pan with sugar, honey and 1/4-1/2 cup water to help avoid burning.
- bring to boil for a few minutes while stirring.
- turn heat down to a simmer.
- they will break down on their own as you cook but you can mash with your favorite masher or immersion blender till desired consistency is reached.
- add lemon juice to help thicken.
- continue to simmer(20-30m), while stirring, until you you’ve reached your perfect viscosity.
- corral into a containment vessel.
addendum
- might be a good idea to add a bit of salt.
- could add cinnamon or vanilla or orange for flavor.
