It sort of looks like the bark is peeling from the trunk. Is this bad? Still new to growing fruit trees.
I can’t see any peeling in the photo. Sometimes, putting a thumb next to the detail you want to be in focus is enough to coax auto-focus to do the right thing.

Any dark, sunken spots on trunk are generally bad since it usually means the cambium (living vascular layer) is dead. It could be mechanical damage, sun damage, cold damage, disease/pest damage, and etc. to cause it.
Your persimmon leaves look pretty nice, so I wouldn’t worry about one dark spot if it’s small.
BTW, deer/rodents will still get your tree. You may want to add a trunk guard and a bigger fence.

By bigger fence do you mean wider? Do you think a 5 ft fence is tall enough
Deer will have no problem eating leaves poking of the fence.
The spot on the trunk, does it have a hole inside leading to tunnels or a cavern? If so, borer could be a possibility (google persimmon borer).
