What need to grow fruit/nut am I missing? Zone 7 high desert

I have alkaline soil, and late spring frost as well as early fall frost. Typical goring season is from the first week of May through mid October. Due to the dry climate, disease pressure is very low. So far I have planted:

Peach
Nectarine
Chojuro pear
Korean pear
Bosc pear
Seckle pear
3 sweet cherries
1 sour cherry
American and Asian persimmons
Paw paws
European and American grape varieties (concord and muscat styles)
Goumi
Honeyberry
Serviceberry
3 varieties of gooseberries
Red, white, and black currant
Crandall currant
Sudachi and Yuzu citrus
Several fig varieties
Pineapple Guava
Hardy Kiwi
Strawberries

I have space for just a few more trees and shrubs. What to plant? I don’t have any nuts, but I don’t want a giant tree, which most nuts other than pistachios and almonds are. I’m not interested in planting either of those.

I forgot to add, multiple apple varieties and 3 euro plums are in ground as well.

Prickly pear? For something fun and unique?

I actually enjoy prickly pear. I would grow the spineless version, but I’m not sure it’s hardy enough here.

I had the puree in Arizona before and liked it (not sure which kind) but at some point I want to get one and plant it. Its evidently hardy enough for Z-7, the one with spines tho.

I always thought of them as quite hardy, they grow in Wisconsin.
