Made this recipe tonight with Stayman apples as suggested. I had two bowls as it was so good.

For those of us who cannot find Stayman apples, what are apples from a supermarket that can be a good substitute to Stayman?
Braeburn and York would work for what I like flavor wise. Tart enough and have a distinctive flavor. Some recipes say use Granny Smith but they taste too sour for me.
Thanks. I may be able to find Braeburn in New England but have never seen any York. I may as well use Gold Rush for the soup.
I use a Braun hand blender in the pot. Quick and easy. Great for applesauce too. Super easy to clean up after blending stuff.

Funny typo: At one place in the recipe, it appears that the plural of Stayman apples is Staymen.
Don’t have heavy cream, and I’m not traveling outside today. When I have all the ingredients, I will also adapt to an Instant Pot.
In apple season, I make a lot of apple sauce. One year, I also made pear sauce and used that in my butternut squash soup. I liked it even more than the apples!
