Does anyone know how and when to trim yard apple trees??

Welcome aboard! There are many schools of thought on pruning times. Most do at least fall pruning after dormancy.

Welcome to this site. Lots of good advice and helpful people here. How big is the tree(s) you are looking at trimming? How big( tall ) are you looking at making them be?

I think both fall and late winter pruning has its pros and cons. Good thing about fall pruning is that your tree doesnt need to develop unnecessary buds but comes with more risk of disease. So depending on the tree, if your still in a structural fase I would go for late winter pruning, and if you are in a more productive fase u could consider a fall prune after crop drop.

A very general rule of thumb is to prune during dormancy to improve structure, meaning take out bigger stuff when the tree is dormant, and to prune during active growth to remove excess growth, open up the tree to light and air and such as that. But you can safely prune any time you see something that needs to go.

For starters: take out any dead, diseased, or damaged branches as soon as you see them. When branches are crossing take one of them out.
