This past fall one of my grape seedlings produced its first grapes and the grapes tasted exactly like the Concord grape. The skin was also pleasant eating and since I have not eaten a Concord grape in years, I can’t remember if I used to eat the skin or spit it out. Are the Concord skins eaten or disposed of? My seedling grape is from a 40 below parent (probably Niels Hansen’s Azita grape from a 1925 introduction of Beta x North Dakota wild Riparia).

I think this is a manner of personal choice. I personally pop the grape then swallow everything. My wife spit the skin and the seeds.
Like you can see… Personal choice.
