Drying jujubes

Here is what I do. This time I am using Lang known to be typical drying jujube.

Pitting. I am using this simple ebay tool. It could be a bit of a chore but I do play some baroque music in the background (Handel, Telemann, Zelenka and the like) and the job is done in no time Cores can be used for jam or fermentation (goes well with persimmon). Nothing is wasted Loading dehydrator. This is a kiwi brand with 15 trays. Good thing about pitted jujus is that it can be squeezed in without any problem even when the fruit is large Drying pitted fruit is much faster then unpitted ones. No more munching on those annoying pits that leave you with sore mouth Vacuum sealing. Final product is a delicious Red Date. No additives no preservatives. Stored in cool dark place lasts 12 months or more

I did not pit mine, though I had not thought of using that little tool you did. May have to look into that. I blanched mine first then popped into the dehydrator, then into canning jars for storage. They don’t last long enough at my house to worry about vac packing!

Very nice drying process. Do you still freeze it or refrigerate it?

nice mechanization you got there. And i agree-- some background music helps with the delicate and somewhat tedious chore.

No freezing or refrigerating, Tony. Just cool and dark place. But as Chris mentioned, they go rather quickly.

Fermentation as in making wine?

More of a spirits than wine.
