How does everyone else prepare their apples before slicing, dicing, or cooking them?
I start by cutting them in half, cut the stem and flower end off, then cut a cone in the middle to remove the core, then trim bad spots off. I don’t peel my apples.
That is precisely the way I do it too!
I do like you do. Only trim out a bit less core and ends. Then I peel the whole thing. I don’t like the texture of the skin. And on store bought that takes off most pesticides. I eat enough fruits and veggies that any nutrient loss by peeling doesn’t matter.
No fancy tools, just a veg knife. Cut in quarters, cut out the core and flower-bits, peel and grate in a kitchen robot, if neccessary. And I’m always glad for our huge 400g apples that are great for cooking.
Cut in half, use a melon baller to scoop out the center, stem, and blossom end. Don’t peel. If making baked apples use an apple corer part way through and dig out the top 2/3s of the core with a small knife. Fill with brown sugar, walnuts, lemon zest, etc.
I always peel half the skin and work around the core to get every bit of the flesh. Then I harvest the seeds when done.
We have a 20 year old (pampered chef) apple pealer corer slicer.
It works great on kieffer pears and that is mostly whatwe have used it for… processing lots of pears into pear preserves.
It peals slices and cores them… quickly too.

I have one of those but it always takes off too much flesh with the skin so I don’t use it often. It IS very fast, though.
I cut around the core and then peel it. I’m left with a square’ish core i toss.
I’m allergic to whatever pesticides they use for grocery store apples because if i don’t peel those, my ears and mouth will feel so itchy. Every now and then I’ll swell a little bit too. 0 issues with non-sprayed apples. Non-sprayed apples, I’ll eat the skin. Grocery store, i have to cut a lot of if off for it to be edible to me
This is what I use for applesauce, to make the chunky type. I’ve never had good results with pears.
For smooth applesauce, I cut the fruit in half, fill up a big pot, then steam them till soft enough to go through the strainer, which removes the cores, seeds, and skins.
@ltilton … Pears are mostly what we use ours for. Kieffer pears mostly and it works great for the pealing and slicing.
The way my wife makes pear preserves… we peal and slice them… and end up with a big pile.
She puts them in a large pot and adds sugar… and just lets them sit on the stove in that pot until the next morning…
Then she cooks them … simmers them for quite some time. Sorry I dont know the exact cook time.
They turn out like this…

The slices for the most part remain intact and lots of pear syrup or honey is created.

Do you use the coring blade, too?
How do you eat all that sugar on keto? I don’t add sugar to anything I eat. And have cut my fruit consumption in half. Mostly low sugar fruits. I eat more raw veggies than fruit.
@ltilton … yes… we use the the corer too… it cores them, peals them and slices them.
The slices have a consistent thickness too which helps them to cook consistently.
@fruitnut … i have not eaten pear preserves since about 2016. My wife and kids and now grand daughter can eat them.
When I do cheat on keto… I normally do that with extreme infrequency and portion control.
I used to cheat every Thanksgiving… and have a piece of pecan pie… or Christmas and have a piece of chocolate pie.
That will absolutely knock you out of ketosis for a few days…
Also one heaping tablespoon only of pecan pie or pear preserves… gives me a really good taste of it… but may not kick me out of ketosis. I can eat around 35 grams of carbs daily and remain in ketosis.
For some people the max is higher… around 50 grams… others lower… 20 grams… depends on the individuals metabolism.
I have eaten nothing but meat since Sept 15… with the exception of my trip to Englands Orchard… and the persimmons, jujubes, pawpaws, I tried. The next day I returned to carnivore diet.
If the next two weeks go well… i plan to return to keto… will make that change slowly over a week or two.
All those figs and raspberries and persimmons I have been harvesting this fall… I have not eaten any of them. My family has sure enjoyed them.
I dehydrated lots of figs… and once I return to keto… i will have some of those.
