All the beets I’ve grown have a sort of dirt taste when eaten raw, especially the really big ones. They have a sweet, but sometimes a distinctly unpleasant earthen flavor. For me, just cooking the beet with ground meat is sufficient to make it a lot more palatable. Pickling is also an option according to this article.

The largest beet I’ve harvested, next to a 40oz jar of Jif, about as wide as your hand. Unfortunately, it split pretty badly, but was nonetheless still edible.
