I’m also interested to hear about any expieriences with Ref Devil. I have a stick that I didn’t get around to grafting in may but most likely will still graft it and see what happens. Trees of antiquity calls it out as consistently the best red flesh apple for them.
Neil recommended red devil to me. I was originally interested in pink parfait, but was told that it doesn’t always ripen in time if you have a short season, and this one was suggested along with winekist but I decided on red devil.
By the time I read about Mendocino Cox last year, it was already sold out, but I find that intriguing because I cannot see it for sale anywhere else and also it seems like a lot of people think that Cox’s Orange Pippin is the best flavored apple, but the tree is not very vigorous and also I’m not a huge fan of really soft apples. So to read that Mendocino Cox has the same intense flavor as Cox’s orange pippin but more vigorous and a crisper texture. I don’t get why everyone doesn’t grow it,
Just to be clear, I’ve never ran across an Cox’s Orange Pippin Apple to sample, So I don’t personally know how good they are.
Red fleshed apple called “Pink Princess” you might be interested in it too, This cultivar has pink flesh and tastes like fruit punch. It is also resistant to scab.

How is the texture on pink princess? Is it fairly reliable on ripening or is it a little pernickety?
Pink Princess Apple has a clean textured flesh and great for fresh eating. i hear some folks use it to also make cider, it has a strong flavor. Pink Princess Apple – Trees of Antiquity
