I have seen you many times talking about brix in peaches. I think your peach brix numbers are much higher than they are on italy internet sites when i looked peach variety information. Brix are about 12 some little bit lower, some little bit higher but no 20’s brix peaches. I think your low rainfall might effect fruit, if you deduct rainfall to you peach tree. Nectarines seems to be have higher brix numbers than peaches. You said you didn’t like acidic type peaches. What variety you think as acidic? Red Heaven? Using common sense if you deduct rainfall, your peaches might be sweeter. I think what comes to flavor of peaches it has more to do than just brix number which affect flavor. Are you only interested in brix as you talk about so much of it? I think peach flavor is combination of sugar and acidic and maybe some others too, using common sense and what I have read on internet. Have you read on internet about this flavor thing? I have read on internet English and Italy peach variety information and have seen those sweetness thing little bit, opinions on peach varieties. I think i have read on internet on peaches if there is low sweet/acid ratio, taster perceive almost feeling astringency. That give idea that acid is more factor the overall flavor than sweetness. You said you haven’t measured acids so i think you don’t get complete image of peach flavor. You taste more than just sweetness. You measured brix which shows sweetness, but don’t tell much about overall fruit taste as acidic also effect fruit taste.

I have found some peach variety information on Italy which have brix and acidic numbers so you might to look at them. There is some familiar varieties too. Those brix numbers are much lower than your best 22-28. This is from 2008 let’s take a look, here is link to that site :

First is yellow peaches pasta gialla. Red Heaven is 12,6 brix and Acidità 10,7 (meq/100g). Rich Lady is 12,8 brix and 12,3 respectively. O’henry is 14,8 brix and 12,8. White Lady white peach pasta bianca is 15,0 and 2,8. You see they are not in that range in brix you list, but acidita varies more. White Lady is consider sweet peach, but you see acidity is much lower than those others i mentioned above. If you calculate brix/acidity you get high number in White Lady. Is White Lady sweet peach your opinion? What is sweet peach in your opinion? Now you see some brix numbers.

It list average 2011-2013 peach and nectarine varieties, it also list flat peaches. It says subacid / very
sweet <5 mEq / 100 ml, sweet / semi-sweet 5 to 9, balanced 9 to 12, acid 12 to 15 and very sour> 15. Look fig 3 and 2 yellow peach and nectarine peach brix and acidity. Look acidity is dominant of sweetness those words in figure are in English molto dolce-sub acido = very sweet- sub acidic, dolce=sweet, equilibrato=equal, acido=acidic, molto acido= very acidic.

This site is 2012 variety list, it also has sweet cherries, apricot, Asian plum and European plum additional to yellow peaches, cling peach and white peach. Percoca is cling peach. Sapore is taste, buono = good, medio= average med-elev= average-elevated.

You can search brix to see brix text about sweetness, those text are Italy, but you can copy part of it to google translate and translate to English. This might give you information what affect peach taste, as you are interested peach taste. I meant if you search brix you see text what they wrote about sweetness and what affect flavor of peaches.

You can now compare some peaches taste, if you know how they taste and remember that variety and how they compare about some peaches on those list. Red Heaven should be widely available in U.S.A. not sure is it commercial variety you can find grocery shop, but many nurseries have it. It is also in those list so if you know how it taste you might get some idea where your peach taste compared to that Red Heaven as you know now it’s numbers. But don’t get forget those numbers can vary year to year. Hopefully this information is useful to you and give some ideas about peach flavor to you.
