Starting a carbcycle today…

3/4 pint of loganberries with maple syrup… simmered until luscious.

Very pretty color and is awesome with French toast or pancakes. We normally do French toast with sourdough bread toast.

YUMMMMMM.

Finished product… one of our fav uses for logans… and if you have some leftover… you can make a very tasty paleo loganberry icecream with it. Add Cream cheese, heavy whipping cream, vanilla flav … a mixer… and a little freezer time.

We had a little less than a half pint left over… I will make some loganberry ice cream for desert tonight.

How about shag bark hickory nuts for a topping with loganberry ice cream… Mmmmmm.

I pulled the protection of my greens bed today and harvested all … cut them back pretty good.

Pulled the bok choi… it was done… bolted flowered. Going to weed it some and put the cover back on.

This next Sunday Monday Thursday they are forecasting 25 23 16 for us.

Not sure if my floating row cover structure will protect enough for those lows. So far our low has been 27-28.

I will pile on some old bed sheets… and if I can talk my wife into it… some old blankets too.

Greens for at least 10 more salads harvested today… on Jan 1 2022.

That brings the total salads up to 59… so far.

Between rain showers… I finally got to work my greens bed pretty good. I took out the center row… spinach and bok choi… and after harvesting the leaf lettuce good and weeding it well… looking good again.

Hope it does not get as cold as they are predicting the next 7 days… especially that 16 degrees.

So far it has not gotten as cold as predicted… Sunday night it snowed… the low was 28… last night… about the same 27…

I piled some extra covers on my row cover bed… this morning still had snow on it… but sunshine today warming up some. At 35… I opened up my tunnel on both ends to get some airflow in there.

Greens still looking ok.

Had 2 salads from those greens yesterday and one so far today.

And some very nice shell and shag hickory nuts.

Jan 5… my greens bed…

Just b4 I covered it with all the old bed sheets… and some not so old ones and a blanket.

We are supposed to get 26 tonight with 4+ inch of snow tomorrow… then lows of 12 and 18… and finally back up to 44.

A good blanket of snow might help ?

My greens bed today…
Ch 2 4 5 Nashville… calling for 9-11 deg for me tonight. They are usually off 2 or 3 degrees in my favor. Perhaps that snow cover will help.

It’s funny to me. Pig’s feet sound a little off-putting, but ham hocks are amongst my favorite things to eat. I’m sure pig’s feet are delicious too.

Neither are far from the mud in the pigpen…I’ll let you guys fight over the ham hocks.

Pretty much the same as hocks without the meat. Great source of gelatin. I prefer them hot and sometimes chilled resembling head cheese. Perhaps not for the squeamish.

I use pig and chicken feet when making bone broth… and usually a whole chicken carcus or roasted beef bones.

Gels up nicely.

Store bought stocks… have no flavor or nutrition compared to homemade 48 hr bone broth.

Well… Nashville stations were predicting 9 to 11 degrees for me last night… (when my zip was entered)… but my two merc thermometers… one is showing 19… the other 20.5.

They were saying the high today was going to be below freezing… they could be wrong on that too… hope so.

Kale, pea shoots, apple, and banana smoothie, my newest concoction for eye health.

my inlaws love cow tongue and chicken gizzard. tongue and heart id eat. ill pass on pigs feet, blood sausage, and chicken feet.

Well… yesterday morning low of 19-20… and a high of 30… this morning 26 deg on my back porch…

But today it is supposed to warm up nicely and have a low in mid 40s tonight.

At 10 am this morning we hit 40 degrees.

I pulled the snow covered bed sheets and blankets off my floating row cover bed… and opened the ends of the tunnel…

Looks like they might have survived all that.
Hope so.

Getting some light and air flow today.

Just fired up the grill for ribeye steaks tonight… managed to collect enough greens carrots for a couple more salads. Slow growing at these temps.
