Hoshigaki is the traditional dried persimmon method. I’ve seen freeze dried options online, I imagine they would be pretty tasty.
Persimmons make male and female flowers (and some varieties make perfect flowers allegedly) but you usually don’t need male flowers unless you want seeds. All of the named female trees I’m aware of will make fruit parthenocarpically which basically means they make seedless fruit because they think they were pollinated.
